Kovaikai Rice – கோவக்காய் சாதம்
Ingredients
- Ivy Guard – 250g
- Rice – 250g
- Cumin seeds – 1 tsp
- Fennel seeds – 1 tsp
- Mustard seeds – 1 tsp
- Urad dal – 1 tsp
- Chana dal – 1 tsp
- Red Onion – 1
- Tomato – 1
- Turmeric Powder – 1 tsp
- Green Chillies – 4
- Ginger – 1/2
- Garlic cloves – 6
- Coriander powder – 1 tsp
- Asafoetida – A pinch
- Lemon – 1
- Coconut – 1
- Coriander leaves – Few
- Curry leaves – Few
- Oil – Required
- Salt – Required

How to Prepare
Total Preparation time: 30-35 minutes
- Wash rice cleanly then soak it in 380ml water for 30 minutes and cook it and transfer it into a bowl and keep aside
- Chop onion lengthwise, grate coconut, take the juice from lemon, chop the tomatoes, chop coriander leaves, chop ginger and garlic finely and keep aside
- Clean and slice the ivy guards in lengthwise, and take a bowl and keep aside
- Take a pan, add 1 tsp oil once oil heats up, add cumin seeds, add urad dal and channa dal
- Fry till the dals become golden then add onions
- Once onion become golden, add ginger, garlic cloves followed by curry leaves
- Add grated coconut and fry for a minute and turn off the flame and allow them cool then grind them like a paste and keep aside
- Heat a pan with oil and add mustard seeds
- Once it crackle, add green chillies then add tomatoes
- Saute them well till tomato become mushy then add ivy guard
- Fry for 10 seconds then add turmeric powder, coriander powder, asafoetida
- And fry them for a minute then add prepared paste and lemon
- Fry for 5 minutes till oil separates
- After that add cooked rice and mix them well for 3 minutes in low flame
- Turn off the flame and garnish with coriander leaves for nice look
- Now the healthy Kovakai rice is ready for serve
