Brinjal Poriyal
Ingredients
- Brinjal – 8
- Urad dal – 1 tsp
- Fenugreek Seeds – 1/4 tsp
- Mustard Seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Turmeric powder – A pinch
- Coriander powder – 1 tsp
- Small onion – 2
- Tomato – 1
- Red chilli powder – 1/2 tsp
- Curry leaves – Few
- Corinader leaves – Few
- Oil – Required
- Salt – Required
How to Prepare
Total Preparation time 25-30 minutes
- Clean and wash the brinjals and cut them at the base of the brinjal but not till the end and keep aside
- Chop onion, grate coconut, chop tomato and take the juice and keep aside
- Heat the pan with oil, then add mustard seeds
- Once it crackles, add urad dal, cumin seeds, fenugreek seeds and fry for 30 seconds
- Then add onion, curry leaves and saute it well till onion become golden
- After that add turmeric powder, coriander powder, red chilli powder and fry it till raw smell goes off
- Then add brinjal and lemon juice, required salt and mix it well
- Cook them for 5 minutes in medium flame till brinjal change its colour
- If leaves not cooked after 5 minutes, add some water and cook for another 5 minutes
- Then sprinkle 2 tsp grated coconut and saute it for 5 minutes
- Finally turnoff the flame and transferred into a plate
- Now the Brinjal Poriyal is ready to serve.
