Quail Fry – காடை வறுவல்
Ingredients
- Quail medium sized – 500g
- Black pepper – 1 tsp
- Fennel seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Bay leaf – 1
- Cinnamon stick – 2
- Cloves – 3
- Ginger – 1
- Garlic cloves – 6
- Red chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Coriander powder – 2 tsp
- Pepper powder – 1/4 tsp
- Mustard seeds – 1/2 tsp
- Rice flour – 20g
- Corn flour – 20g
- Curd – 3 tsp
- Lemon – 1
- Coriander leaves – Required
- Curry leaves – Required
- salt – Required
- oil – Required

How to Prepare
Total Preparation Time: 20-30 minutes
- Wash the Quail and drain water then add curd, turmeric powder, red chilli powder, salt, lemon and mix it well, marinate for 40 minutes
- Crush black pepper, grate ginger, garlic, chop coriander leaves and grind them like a paste, extract juice from lemon and keep aside
- Take a pan, fry black pepper, fennel seeds, cumin seeds, cinnamon stick, bay leaf, cloves, curry leaves and grind them well and keep aside
- Take a bowl and add turmeric powder, coriander powder, garam masala and prepared spice powder, curry leaves, ginger garlic paste
- Mix it well then add quails and apply oil over it and mix it well
- Then add curd, corn flour, coriander leaves and mix it well
- Then add 3 tsp oil and lemon mix it and close the bowl and mariante for 60 minutes
- Take a pan, add 300ml oil and once oil heats up
- Gently put the marinated quails into the oil and make a deep fry for 10 minutes till it become golden brown
- After turned golden brown, transfer into a plate and garnish with coriander leaves and lemon
- Now the spicy Quail fry is ready for serve
