Goat Intestine Fry – ஆடு குடல் வறுவல்
Ingredients
- Goat Intestine – 500g
- Black pepper – 1 tsp
- Fennel seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Small onions – 5
- Bay leaf – 1
- Cinnamon stick – 2
- Cloves – 3
- Ginger – 1
- Garlic cloves – 6
- Red chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Coriander powder – 2 tsp
- Pepper powder – 1 tsp
- Mustard seeds – 1/2 tsp
- Coriander leaves – Required
- Curry leaves – Required
- salt – Required
- oil – Required

How to Prepare
Total Preparation Time: 20-30 minutes
- Cut, chop the intestine and wash it in hot water for three times and also wash it in turmeric powder water twice and keep aside
- Crush black pepper, grate ginger, garlic, chop coriander leaves and grind them like a paste, extract juice from lemon and keep aside
- Take a pan, fry black pepper, fennel seeds, cumin seeds, cinnamon stick, bay leaf, cloves, curry leaves and grind them well and keep aside
- Heat pan with 2 tsp oil and then add cumin seeds
- Once it splutters, add onions, green chillies and curry leaves
- Saute them till onions become transcluent then add turmeric powder, red chilli powder, coriander powder, pepper powder, spice powder
- Saute them till the raw smell goes off, then add goat intestine
- Fry them for 5 minutes after add 100ml water and close the lid and allow them to cook for 10 minutes
- Open the lid and fry it till the intestine become small and water dried out
- Finally sprinkle pepper powder and coriander leaves
- Now the delicious Kudal fry is ready for serve
