Ingredients

  • Beetroot – 1
  • Rice – 120g
  • Red Onion – 1
  • Cumin seeds – 1/2 tsp
  • Garlic cloves – 3
  • Peanuts – 2 tsp
  • Green Chilli – 1
  • Red chilli powder – 1 tsp
  • Coriander seed powder – 1 tsp
  • Garam masala powder – 1/2 tsp
  • Lime – 1
  • Mint leaves – Few
  • Coriander leaves – Few
  • Pepper powder – Required
  • Oil – Required
  • Salt – Required

How to Prepare

Total Preparation time: 10-15 minutes

  1. Wash rice cleanly then soak it in 380ml water for 30 minutes, add salt and cook it then transfer into a bowl and keep aside
  2. Finely slice the red onion in lengthwise, chop green chillies, chop garlic and grind them like a paste, chop coriander leaves, chop mint leaves separately and keep aside
  3. Grate beetroot nicely and keep aside
  4. Take the juice from lime, filter it and keep aside
  5. Take a pan add 1 tsp oil once oil heats up, add peanuts, saute it till become golden
  6. Add cumin seeds, then add ginger paste, followed by onions and green chilli and saute them for 5 minutes till onion become golden
  7. Then add grated beetroot and saute it for 5 minutes till beetroot become soft
  8. After that add red chilli powder, coriander seeds powder, garam masala powder and mix it for a minute
  9. Once raw smell goes off, add cooked rice and required amount of salt and mix it gently for 3 minutes in medium flame
  10. Turn off the flame and add 2 tsp lime jucie and mix well with rice
  11. Finally sprinkle coriander leaves and mint leaves for nice look
  12. Now the attractive Beetroot rice is ready for serve
