Plum Cake
Ingredients
- All Purpose Flour – 250g
- Powdered Sugar – 200g
- Cocoa Powder – 100g
- Butter – 250g
- Vanilla Essence – 1 tsp
- Baking Powder – 1/2 tsp
- Baking Soda – 1/2 tsp
- Tutti Fruiti – 125g
- Dates – 70g
- Yellow Raisins – 70g
- Black Raisins – 70g
- Dried Plums – 50g
- Cherries – 50g
- Cashewnuts – 70g
- Almonds – 70g
- Walnuts – 70g
- Cloves – 2
- Cardamom – 2
- Cinnamon – A small piece
- Nutmag – A small piece
- Oranges – 5
- Salt – 1/4 tsp
- Eggs – 3

How to Prepare
Total Preparation Time: 20-30 minutes
- Chop cherries, cut almonds, cashewnuts, walnuts, chop dates, extract juice from orange without adding water and keep all of them aside
- Take a bowl, add tutti fruiti followed by cherries, yellow raisins, black raisins, dates, almonds, cashewnuts, walnuts, plums.
- Then pour 500ml orange juice, mix them well, finally seal the bowl with zinc wrapper and allow them to marinate for 2 days
- Take a cake plate, grise it with butter and keep aside
- Now take cooker, add 500g sand and place metal vessel stand at the center and place a cooker plate/any plate over it
- Close the cooker lid and heat it for 20 minutes
- In the mean time, take a fruit bowl, filter the fruits and keep both juice, fruits aside seperately
- Now a another bowl, add butter, use stand mixer and mix well for 10 minutes in low to medium speed till butter is become smooth paste
- After that add powdered sugar and mix it well for 10 minutes
- Then add eggs one by one till it become smooth paste, this will take atleast 15 minutes and keep this batter bowl aside
- Grind cardamom, cloves, cinnamon, nutmag and keep aside
- Take a bowl and add all purpose flour, cocoa powder, baking powder, baking soda, salt and mix them well and sift them twice to avoid lumps
- Then add this into the batter bowl and mix them well then add spice powder and mix them well by stand mixer for 5 minutes till the batter become smooth (add hot water for consistency)
- After that add vanilla essance and mix it well for 5 minutes till it combined well
- Add soaked fruits into the batter spoon by spoon and mix it well till it combined well
- Then add soaked orange juice and mix it well for 5 minutes
- Take the grised cake plate, cover the bottom with a cake paper then fill 3/4 of the plate with cake batter and tap them to settle thoroughly
- Now open the cooker lid and place the cake plate over the cooker plate, close the lid
- And allow them for 50-60 minutes in medium flame, if you use oven, bake the cake for 45 minutes in 350 Fahrenheit
- After that open the lid and check the cake with toothpick or a thin rode, if cake is sticky and close the bake for another 5 minutes
- Turn off the flame, open lid and trasfer the cake on the wide plate
- Finally, the Delicious Plum cake is ready to serve
